there are some meals that we eat all the time. one of them is my mom’s famous chicken teriyaki. it’s more island-style than thick, gloppy sauce and it’s YUM and so light. easy too… here’s how you do it: combine 1/2 cup soy sauce, 1/2 cup sugar, 3 T of fresh grated, ginger (i keep my ginger root in the freezer so it’s always handy) and 3 cloves of fresh crushed garlic. if i happen to have green onions, i chop some up and throw those in too (reserve a few to sprinkle on top of the finished product). marinate the chicken at least half an hour – forty minutes or longer if possible. i also use chicken thighs from costco (boneless, skinless) they are way better and don’t dry out like a breast. heat your grill to high and throw them on for about 6 minutes per side (i like it crispy/crunchy) serve with short grain, “sticky” rice and stir fried veggies. so good and healthy.

my nickname for elle is “my sweet.” well, because she just is. she was born with a kind heart, naturally inclined to see the good, be positive and enjoy the moment. she is funny and is one of the few people who can make jette belly laugh on a daily basis. today she asked if she could drink out of the milk carton because “daddy does.” i said “sure” because well…. she deserves it. she is my sweet and kind elle.

today we had a girl scout meeting for jette’s brownie troop – we are always on the look-out for something fun and interesting to do. So we decided to go the Dirty Dogs, a new spot in Cardiff for some instruction on how to care for and groom a dog. Dirty Dogs is super hip and well….cute surfer boys work there – if i had a dog, i would for sure go back (wink). So we brought three dogs from the troop – Rusty, Sophie & Casey. the girls put on their water proof aprons and away they went – scrubbing those poor dogs down! it was fun to wash those dirty dogs. when they left they were so pretty and fluffy- what a dog makeover! i could sure use one of those. elle told me at the end of the meeting that she would prefer a small chihuahua without hair.
