a family favorite…

there are some meals that we eat all the time.  one of them is my mom’s famous chicken teriyaki.  it’s more island-style than thick, gloppy sauce and it’s YUM and so light.  easy too… here’s how you do it:  combine 1/2 cup soy sauce, 1/2 cup sugar, 3 T of fresh grated, ginger (i keep my ginger root in the freezer so it’s always handy) and 3 cloves of fresh crushed garlic.  if i happen to have green onions, i chop some up and throw those in too (reserve a few to sprinkle on top of the finished product).  marinate the chicken at least half an hour – forty minutes or longer if possible.  i also use chicken thighs from costco (boneless, skinless) they are way better and don’t dry out like a breast.  heat your grill to high and throw them on for about 6 minutes per side (i like it crispy/crunchy) serve with short grain, “sticky” rice and stir fried veggies.  so good and healthy.

    yum – trying that this weekend! 85 degrees here today – I’ve gotta cook on the grill. I had a yummy artichoke for dinner. Biggest one I ever saw – It looked more like a globe than the squared off oval kind we usually have – mmmmm! Thank you California!

    must go thighs! you will be pleasantly surprised. be sure to cook so they are crispy on the outside, otherwise they have a funky texture :) also, it’s so easy to remember – equal parts sugar/soy sauce and 3 T/3 cloves. i always have the ingredients on hand so i make it quite a bit. kids love it. we had with grilled corn on the cob the other night – a great spring/summer meal!

    Your mom actually gave me this recipe (along with a squash soup recipe) when I got married. I still have the recipe card she gave me tucked safely away in my family recipe notebook.:) How neat to know it is one of your family’s favorites!

    oh – and helen…so glad you caught that – a “national” rice cooker is the ONLY rice cooker to own :) a secret language between those that know good rice.
