my love affair with beets…

ever since i went to vegas with lisa back in march, i’ve been obsessed with beets. while we were there, i had two beet salads in one day and i fell head over heals with those silly, little vegetables. how could a small beautifully colored vegetable be so perfect? i discovered prepared beets at trader joe’s and i’ve never looked back. when the kids are in school, i make myself a huge beet salad and gobble it up. they’re like little jewels sitting on a mound of pretty little leaves, surrounded by their friends – miss goat cheese and mr. blueberry. i love my beets.

Makes me even want them with breakfast! And they are good for you, too! Not just pretty and delicious like donuts. My friend Karen eats sliced beets right out of the can! I’ll have to refer her to your “much more cultured” salad! We made beet print pink T-shirts in one of my nature art classes…think about that.

Your salad looks yummmy! I just planted beets from seed in my vegetable patch along with the tomatoes. They are a gourmet blend, red, gold and a red and white stripe. I can wait until they are ready I adore a great beet salad!

Looks divine Zoe! What type of dressing do you put on the salad? I juice a lot of veggies (great way for me to get lots of leafy greens into my boys) and will often add beets. I had dinner at Papagayo last night and had a beet salad with tomatoes, lettuce, goat cheese & avocado w/ a pomegranate dressing ~ it was very gooooood!

i have one of those salad dressing things from Target that tells you how much oil/vinegar/dijon and garlic. that papagayo salad sounds delish! i heart beets!
